Raw Milk Yogurt

There's a lot of different ways to make yogurt. This is our family's favorite way of making yogurt that is simple, tasty, has perfect consistency and yet still retains/enhances all the amazing benefits of the raw milk.

Yield: One gallon unstrained or approximately two quarts strained

Ingredients

Directions

  1. Pour milk into Instant Pot (Instant Pot Duo)

  2. Press yogurt button until the screen says “BOIL”

  3. Allow milk to heat up until it reaches 105-110°F(stir before checking temperature with a dairy thermometer)

  4. Remove pot from Instant Pot and cover with a towel

  5. Press “Cancel” and allow Instant Pot to cool for 5 to 10 minutes

  6. Return pot to Instant Pot

  7. Add 1⁄8 tsp yogurt culture and mix well

  8. Press the “Yogurt” button until it indicates 8 hours

  9. Secure lid on Instant Pot and allow to culture for 10-14 hours until yogurt has fully set up.

    To ensure the Instant Pot keeps warm for the full 10-14 hours, you'll need to reset the timer after a few hours by pressing “Cancel” and then “Yogurt” until it indicates 8 hours

  10. Gently remove pot and cover with towel

  11. (Optional but recommended) To encourage the yogurt to fully set up, allow covered pot to slowly cool on the counter for up to one hour

  12. Gently place covered pot in fridge and allow to sit for at least six hours to allow yogurt time to slowly cool down and set up

  13. (Optional) For uniform consistency, skim cultured cream off top of yogurt. Eat separate or use as a sour cream substitute or add a pinch of salt for a cream cheese substitute (we're not quite sure why but we've found the cultured cream consistency changes with the seasons)

  14. (Optional) Dump yogurt into small straining bag and allow whey to drain off of yogurt until it reaches your desired consistency

  15. There are many options for flavoring and sweetening yogurt. We prefer adding 2⁄3 cup of maple syrup for subtle sweetness and flavor. We tend to eat our yogurt with homemade granola (see below for recipe). Other flavor options include homemade jams, jellies and preserves, fresh or frozen fruit, and honey. Use yogurt in smoothies instead of milk to increase protein and creaminess

  16. Enjoy!

Homemade Granola

Ingredients 

  • 7 Cups organic quick oats 

  • ½ cup honey 

  • 1 TBS vanilla 

  • 1 cup whole wheat flour 

  • 1 cup (two sticks) salted butter, softened 

  • 1 cup warm water 

  • 1 tsp salt 

Directions 

  1. Mix warm water, honey, vanilla, salt together until honey is dissolved 

  2. Mix dry ingredients together 

  3. Combine wet and dry ingredients with butter in medium bowl 

  4. Bake in two, parchment paper lined shallow pans/cookie sheets at 300° f for about 30-40 minutes, stirring every 15 minutes, until granola is golden in color and to the desired crispiness 

  5. Allow to fully cool to room temperature and store in an airtight container in the refrigerator 

  6. Enjoy with raw milk and a bit of maple syrup for a healthy snack or enjoy with thick raw milk yogurt, sweetened with maple syrup, for a simple, hearty breakfast
